Sheet Pan Honey Garlic Chicken

Ingredients
1½ pounds boneless, skinless chicken breast, cut into bite-size pieces
2 cups broccoli florets
1 red bell pepper, cut into pieces
1 yellow bell pepper, cut into pieces
1 small zucchini, sliced into half-moons
1 tablespoon olive oil
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley or green onion for finishing
Honey Garlic Sauce
⅓ cup honey
¼ cup low-sodium soy sauce
4 cloves fresh garlic, minced
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon fresh grated ginger
1 tablespoon cornstarch
2 tablespoons water
Instructions
Preheat oven to 425°F and line a large sheet pan with parchment paper or lightly coat it with cooking spray.
Place the chicken, broccoli, bell peppers, and zucchini on the sheet pan. Drizzle with olive oil, season lightly with salt and pepper, and toss to coat.
Spread everything into an even layer and bake for approximately 18–22 minutes, stirring once halfway through, until the chicken reaches an internal temperature of 165°F.
While the chicken cooks, combine honey, soy sauce, garlic, rice vinegar, sesame oil, and ginger in a small saucepan.
Bring the sauce to a gentle simmer. Mix the cornstarch and water separately, then stir the mixture into the sauce. Simmer briefly until the sauce thickens.
Remove the sheet pan from the oven and drizzle the honey garlic sauce over the chicken and vegetables. Toss gently to coat.
Return to the oven for approximately 2–3 minutes.
Finish with fresh parsley or green onion and serve warm.
